Food * Fire * Glory

Once Tim Byres, Chef and Owner, made the commitment to open SMOKE in Dallas, he spent three months traveling through the Deep South talking to people about cooking authentically over wood. Upon his return to Dallas, he was determined to make food that conjures up memories of American heritage, food with soul, nostalgic integrity, the spirit of hospitality, celebrating community and creating lasting flavors that linger.

Smoke has received very impressive Press!

Food & Wine says "Best Bacon Burgers in the US."

Food Republic says, "Tim Bryes is a card-carrying Grilled God."

Southern Living says, "In the South, it's not unusual for a party to begin with a very large pot and a wood fire... The fragrant pot and tumble of ingredients beckon us outside around the table... It's a juicy, loud, messy, and delicious seasonal pleasure...Tim  Byres, one of the smartest young chefs around, gets it. His restaurants, SMOKE and Chicken Scratch, are devoted to cooking over fire, from scratch food, and community. We love the funky, rustic age he's brought to shiny Dallas."
